marinated pork chops

i usually shy away from marinades, because i hate the waiting game. but, as a working woman who has a husband who LOVES to grill, i've recently become a fan. especially when the marinade is easy to make and can sit overnight and while i'm at work - which is what i did for this one. the recipe only calls for it to marinate overnight, but i took it to the next level and let it marinate overnight, then i swished it around a bit in the morning, and it marinate while i was at work all day. the outcome was magnificent.

the ingredients list for this is long, but don't let it scare you. you probably have most of these ingredients in your pantry/refrigerator already.

ingredients:
1/2 cup vegetable oil
4 tablespoons soy sauce
3 tablespoons vinegar
1 1/2 tablespoon worcestershire sauce
2 teaspoons lemon juice
2 teaspoons mustard
1 teaspoon salt
1 teaspoon pepper
1 teaspoon dried parsley flakes
1 garlic clove, minced
4 (1-inch thick) pork chops

directions:
1. combine the first 10 ingredients (which is everything in the ingredient list except the actual pork chops) in a large resealable plastic bag or shallow glass container.
2. add pork and turn to coat.




3. seal bag or cover container. refrigerate overnight.
as i mentioned before, i marinated mine overnight. this is the picture of them the morning after they had marinated them. here is the picture of after they had marinated after i had been at work all day...
not any difference, really. lol - i'm sure overnight or even while you are at work all day is fine.

4. drain and discard marinade.

5. the recipe calls for grilling over medium coals for about 20-25 minutes. but we live in an apartment with no grill. (insert sad face here.) BUT we do have a grill pan! so the hubs volunteered to play grill master. either way, grill until the inside is no longer pink and until the juices from the marinade run clear. here are pics of the journey from raw to cooked...




YUMMY DELICIOUS! these little chops were gone. we devoured them all. what little piggies we are! the taste is a little tangy but in a good way. i can't wait to try these on the grill next summer, but for now, the grill pan works wonders! try these, and let me know if you enjoy them as much as we did.
